I am personally a big fan of ThinApp.
Not only is it great to use as a deployment tool for production applications, but its an ideal way to carry around admin tools without having to install the apps on various machines.
VMware have saved everyone the task of repackaging the vSphere client by releasing it as a free download on the VMware Fling website.
